Cream Cheese Coconut Cookies

A few years ago, I was working at my Father's company, and I decided that what we needed was some holiday cheer.  So I asked everyone to join in on a cookie swap, and a handful of people jumped at the opportunity.

The great thing about a cookie swap (if you have never done one) is that you get a bunch of different kinds of cookies while you just provide one kind yourself.  So you bring cookies enough for everyone who participates, along with the recipe, and in return you get a variety of unique cookies to bring home.

Now we are always on a hunt for the perfect cookie, or at least one that is delicious enough that it ends up in your holiday collection for years to come.  When you come across one of these treats. you are hoping that person who made them is kind enough to share their recipe.  **Try not to be one of those people who never share their secrets...don't you want your deliciousness to be devoured by tons of happy people?**

Well this particular year, I found one of those cookies.  They are a cake based cookie, so there is a box cake mix that is used, along with coconut and cream cheese.  They were moist and light and so yummy! I made them for my family the following Christmas, and now they have become a staple in our cookie tradition making sessions.  So I am not passing along this secret recipe to you!

The recipe calls for all of the cookies to be rolled in powdered sugar, but this year I decided to be a little more festive.  I incorporated red and green sugar sprinkles to give them a more "Christmasy" feel.  Now...on to the recipe!

Ingredients

  • 1 (8oz) package cream cheese
  • 1/2 cup butter, softened
  • 1 egg
  • 1 box yellow cake mix with pudding (pillsbury)
  • 1 1/2 cups shredded coconut
  • 1/2 teaspoon coconut extract
  • 1/2 cup confectioners sugar

Directions

  1. In a medium bowl, cream together the cream cheese and butter.  Stir in the egg and coconut extract.
  2. Add in the cake mix and coconut a little bit at a time until well blended.
  3. Put in refrigerator for 30-45 minutes to stiffen up the dough, making it easier to handle.
  4. Roll into 1 inch balls and coat in confectioners sugar.  Place 1 inch apart on to an ungreased cookie sheet. (I used to parchment paper)
  5. Bake for 13-14 minutes.  Cool for a few minutes before transferring to a cooling wrack.

<3 P.S.

I rolled some in confectioner's sugar, and some in the colored red and green sugar.  You can completely coat the in the colored sugar, or lightly roll them so more of the white cookie shows through.  Either way, they will taste delish!
