White Chocolate Cranberry Cookies

Every year for Christmas my Aunt makes white chocolate cranberry oatmeal cookies. This year, I decided to stray a tiiiiiiny bit, and try this version that is similar, but has no oatmeal. This cookie has the consistency of a crunchy chocolate chip cookie, but with white chocolate chips and cranberries instead of your classic semi-sweet chocolate morsels.
What I love most about this cookie is how beautiful and festive they are. The cranberries are like rubies and the white chocolate chips are so bright in contrast to the red. They are pleasing to the eye and to the palette.
Ingredients
- 3/4 cup butter or margarine, softened
- 3/4 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons vanilla
- 1 teaspoon almond extract (optional)
- 1 egg
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup white vanilla baking chips (6oz)
- 1 cup sweetened dried cranberries
Directions
- Heat oven to 350 degrees. In large bowl, beat butter, brown sugar, granulated sugar, vanilla, almond extract and egg with electric mixer on medium speed until well mixed. Stir in flour, baking soda and salt. Stir in baking chips and cranberries.
- Onto uncreased cookie sheets, drop dough by rounded tablespoonfuls about 2 inches apart.
- Bake 12 to 15 minutes or until light brown. Cool 2 to 3 minutes; remove from cookie sheets to cooling racks.
These are your typical drop cookies. You basically mix and plop onto a cookie sheet which makes these super easy to make. They were a huge fan favorite when I brought them in to my co-workers, and I cannot wait to bring them out for Christmas Eve!

12 minutes was the magical baking time for me. Even if they looked a tad bit underdone, as soon as I let them rest for 1 minute, they became a nice golden brown. This recipe was actually a contest winner in the Celebrate the Season Holiday Cookie Contest. Shout out to Laura Abeloe!
