Pumpkin Swirl Brownies
Prep Time: 15 minutes Start to Finish: 2 hours 30 minutes

We are almost a week away from Thanksgiving, and that means desserts with pumpkin are a MUST! I usually make my classic pumpkin bars (which I still plan on doing for Thanksgiving Day) but I love to try other recipes that include pumpkin. When I came across these brownies with a thanksgiving twist I thought I had to try them!
These are "semi-homemade" which means that you do use a boxed brownie mix for this recipe, but hey.. that's ok. Sometimes it's nice to have a recipe that doesn't take too much time. You never know when you are going to need to whip up a dessert on a moments notice.
The brownies were light and the pumpkin filling had the exact same texture as pumpkin pie. It was fluffy and decadent and melt in your mouth delicious!
*Note the start to finish time includes a 1 hour 30 minute cool time, so the actual work involved is minimal. I couldn't find the brownie mix that the recipe was calling for, so I used the Betty Crocker Fudge Brownie mix and adjusted the ingredients based on what the box actually called for**
Ingredients
Filling
- 1 package (3 oz) cream cheese, softened
- 1/2 up canned pumpkin (not pumpkin pie mix)
- 1 egg
- 3 tablespoons sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
Brownies
- 1 box Betty Crocker Premium Brownies Ultimate Fudge
- 1/4 cup vegetable oil
- 2 tablespoons water
- 1 egg
Directions
- Heat oven to 350 degrees. Grease bottom only of 9-inch square pan with shortening or cooking spray. (I also lined it with foil for easy removal) In small bowl, beat filling ingredients with electric mixer on low speed until smooth. Set aside.
- Make brownie batter as directed on box. Spread three-fourths of the batter in the pan. Spoon filling by tablespoons evenly over batter. Spoon remaining brownie batter over filling. Cut through batter several times with knife for marbled design.
- Bake 40-45 minutes or until toothpick inserted 1 inch from side of pan comes out almost clean. Cool 1 hour 30 minutes. Cut into 4 rows by 4 rows. Store covered in refrigerator.
These were so easy to make, and they look beautiful. Everyone loves a festive dessert, so why not step out of the box and try this one!? They would make a great addition to your Thanksgiving dessert menu.
<3 P.S.
It says it makes 16 brownies, but that is all relative to how big you cut them. If you feel like making bite sized treats, then you will get way more than 16!
