Cinnamon Christmas Cookies

It's that time of year again!  Thanksgiving has come and gone, and Christmas comes barging in full swing.  I absolutely love this time of year; from the decorations, to the music (yes I am one of those people that has Christmas music on in my car as soon as it's available), and of course...the cookies!

There are soooo many different cookies that you can make for the holiday season.  So today, I'm kicking it off with Betty Crocker's Cinnamon Christmas Cookies.  An ultimate plus about these cookies:  There are NO eggs in the batter!  So you can lick the spoon and bowl as much as you want!  These were actually dubbed Cinnamon Cardinal Cookies but I didn't have a bird shaped cookie cutter.  So I chose stocking and reindeer instead.  

You can be as creative as you want with these.  Use different colored sprinkles, use different designs and cutters...the opportunities are endless!  

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon or cardamom
  • 1/3 cup whipping cream

Directions

  1. In large bowl, beat butter and brown sugar with electric mixer on medium speed until light and fluffy; stir in vanilla.  In small bowl, stir together flour, baking soda, and cinnamon.  On low speed, beat flour mixture into butter mixture alternatively with whipping cream.  Divide dough in half.  Wrap halves in plastic wrap.  Refrigerate until firm, about 30 minutes.
  2. Heat over to 350 degrees.  Lightly spray or grease 2 large cookie sheets.  *I used parchment paper*  On lightly floured surface, roll out half of dough at a time about 1/8 inch thick.  Using 3-inch lightly floured shaped cookie cutters, cut out cookies and place on cookies sheets about an inch apart.
  3. Decorate cookies as desired.  
  4. Bake 6 to 8 minutes or until light brown and set.

This recipe was really easy, and the cookies turned out great!  They are light, not too sweet, and the cinnamon flavor really comes through.  So start your holiday baking with these fun treats that everyone will love!

This is a great kid friendly recipe.  The little ones will love decorating the cookies.  Encourage creativity and baking at the same time!
