Barbecue Turkey Meatloaf

Barbecue Turkey Meatloaf with Mashed Sweet Potatoes and Roasted Broccoli

Sometimes you just want some comfort food.  And sometimes that comfort food is meatloaf.  This recipe is a lighter version of your typical beef meatloaf, substituting red meat for turkey and mashed potatoes with sweet potatoes.  

Plated has created a well balanced meal of not only nutrition, but flavors as well.  The turkey meatloaf has a slight smokey flavor thanks to the barbecue sauce which pairs off nicely with the sweetness of sautéed onions.  The mashed sweet potatoes are delicious, mixing in butter, maple syrup, and chipotle pepper with adobe.  Sweet, smokey, and a little bit spicy, these will become a quick staple in the household.  Roasted broccoli rounds out this meal providing some nice crunch and added veggie.  This is my favorite way to make broccoli...I literally make this to snack on. #healthysnack

Here are some of my tips to make this dinner go as smoothly as possible.  Try it out, you won't be disappointed.

~The recipe doesn't call for you to peel the sweet potatoes.  I left the skin on, but you certainly have the option to peel them if you want.  Just keep in mind the skin adds a different texture to the mashed potatoes (and nutrition). 

~Once you actually form the turkey meatloaves, the mixture is really wet.  Like stick to your fingers can't get it off wet.  I did add a little extra breadcrumbs to help firm it up a bit.  Don't worry, they bake up to the perfect firmness.  Just do your best to make the loaves rectangular and brush on that barbecue sauce.

~I put the meatloaves and the broccoli in at the same time.  I like to make sure my meat is cooked through, and I would prefer well done over slightly juicy.  This timing worked out great for me giving it the extra 5 minutes of cooking time.  

~I used a fork to mash the sweet potatoes in the actual pot.  You can use a potato masher as well, or you can pull out a mixer or blender and throw the ingredients in there to make the potatoes extra smooth.  Either way, the flavors blend together to create a flavor profile that is out of this world.

I actually made this during the day and packed it up for dinner.  It was great reheated.  The broccoli still had its crunch, and the turkey wasn't dry at all.  #mealprep
