Toffee Bars

Next up in Betty Crocker's Big Book of Cookies is Toffee Bars. These are great if you are looking for a chocolate caramel fix. They have a nice cookie crust, topped with melted chocolate and sprinkled with chopped nuts; they have a layer that will satisfy whatever your taste buds might be craving at the moment.
Ingredients
- 1 cup butter, softened
- 1 cup packed brown sugar
- 1 teaspoon vanilla
- 1 egg yolk
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 2/3 cup milk chocolate chips
- 1/2 cup chopped nuts
Directions
- Heat oven to 350 degrees. In large bowl, stir butter, brown sugar, vanilla and egg yolk until well mixed. Stir in flour and salt (dough will be stiff). Press dough into ungreased 13x9-inch pan.
- Bake 25-30 minutes or until very light brown (crust will be soft, do not overbake.) Immediately sprinkle chocolate chips over hot crust. Let stand about 5 minutes or until chips are soft; spread evenly. Sprinkle with nuts. Cool 30 minutes in pan on cooling rack. For easiest cutting, cut into 8 rows by 4 rows while warm.
To make removal and cutting easier, I lined my pan with aluminum foil which allowed me to easily lift the bars out of the pan. This is a great trick when you are baking bars or brownies. Just always measure the aluminum foil longer than the actual pan to allow for an overhang. This will make it easy for you to grab the foil once they are done baking.
I love how these bars are a one bake stop. Once you cook the bottom part, the top layer melts on its own and it's all about spreading and cooling after that. An easy, delicious dessert to make, these toffee bars will definitely be coming around again!

I used a mixture of walnuts and pecan for my toffee bars, and they came out great! I also used mini chocolate chips and regular sized chips for melting the chocolate. As long as your have chocolate to melt it makes no difference!
