PB&J Cupcakes
Ahhh peanut butter and jelly...brings back so many childhood memories. I personally like my PB&J sandwiches chilled in the refrigerator so that the jelly and peanut butter meld together and get a firmer gooey texture whilst also soaking into the bread.
I think that everyone has some fond memories of PB&J....so today I am bringing it back old school style with some peanut butter and jelly cupcakes! I made these years ago for the girls at work, and to this day they still talk about them. So I have decided to revisit this recipe and share it with you!
They are super easy (the actual cupcake is a box mix), so it takes no time at all! Sweet and salty, these are the perfect cupcake for a mid-day snack.
Ingredients
- 1 box pound cake mix (plus eggs, water, and oil per package directions)
- 1/2 cup grape jelly (you can you substitute any flavor you prefer)
- 3 oz. cream cheese, softened
- 1/4 butter, softened
- 3 tbsp creamy peanut butter
- 2 1/4 confectioner's (icing) sugar
- 1/2 tsp vanilla extract
- Nutter-butters for direction (optional)
Directions for Cupcakes
- Prepare pound cake according to package directions.
- Place paper liners into cupcake pans. Fill each well with batter. Bake for 15-20 minutes or until tester inserted into center of cupcake comes out clean. Transfer cupcakes to a wire rack to cool.
- Using a serrated knife, carefully cut a 1/2 inch circle or indentation from the top center of each cupcake.
- Fill each circle with grape jelly.
Directions for Icing
- In medium bowl, using an electric mixer on medium-high speed, beat cream cheese, butter and peanut butter for 1 minute or until light and creamy.
- Gradually beat in sugar until blended.
- Beat in vanilla.
- You can spread onto cupcakes with a knife, or you can use a piping bag to frost cupcakes.
**I doubled the recipe for the frosting because I piped mine, and needed more than what it called for.** I also place a small bite sized nutter butter on the top and piped in a little bit of grape jelly for decoration. Get creative- sprinkle on some chopped peanuts, or if you are using strawberry jam place a fresh strawberry on top. The possibilities are endless!

Don't make the wells too big when you are cutting out the circle. Sometimes too much jelly can be overwhelming.
