Snickerdoodle Bars

I have been eyeing up this recipe for a while, so when it came time to try them I was so excited!  Not only are these snickerdoodle bars light and fluffy, they are salty with the perfect balance of sweetness.  My favorite desserts are the more savory cake-like desserts, so these were right up my alley!  Think vanilla cake meets cinnamon buns.  Melt in your mouth deliciousness, these have become an all-time favorite!

Ingredients

Bars

  • 2 1/3 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup butter or margarine, softened
  • 1/2 cup packed brown sugar
  • 3 eggs
  • 1 teaspoon vanilla

Cinnamon Filling

  • 1 tablespoon granulated sugar
  • 1 tablespoon ground cinnamon

Glaze

  • 1 cup powdered sugar
  • 1 to 2 tablespoons milk
  • 1/4 teaspoon vanilla

Directions

  1. Heat oven to 350 degrees.  Spray or grease bottom only of 13x9-inch pan with cooking spray.  In small bowl, mix flour, baking powder and salt; set aside.
  2. In large bowl, beat butter with electric mixer on high speed until creamy.  Beat in sugars.  Gradually beat in eggs and vanilla until well mixed.  On low speed, beat in flour mixture until well mixed.
  3. Spoon half the batter into pan; spread evenly.  In small bowl, mix cinnamon filling ingredients; sprinkle evenly over batter.
  4. Drop teaspoon-size amounts of remaining batter evenly over cinnamon filling mixture.
  5. Bake 20-25 minutes or until golden brown and toothpick inserted in center comes out clean.  Cool completely, about 1 hour.
  6. In small bowl, stir glaze ingredients until smooth and thin enough to drizzle.  Drizzle over bars.  Cut into 6 rows by 4 rows.

Let me tell you.  These bars were soooo good!  What I love most about a dessert like this is that they aren't too sweet, which means you can eat more than one!  At least that's how I see it.  Try them out and comment below.  Thanks Betty Crocker for another great reciepe!

<3 P.S. If you line the pan with aluminum foil, it makes for easy removal and easy clean-up!  This makes cutting the bars in nice even squares a breeze and also prevents you from scratching up your pan!
