Lemon Bars

Lemon bars is a dessert that my Aunt has been making since I was a little girl, and Betty Crocker provides a great recipe.  To this day, they continue to be a family favorite.  They remind me of springtime, and with the tease of warmer weather (and a request from my book club) I decided to whip up a batch of these this past weekend.  

My love for lemon may influence my love for this dessert.  However, I do think they have the perfect balance of tartness and sweetness.  The buttery crust provides a salty crunch to the softer, custardy like texture of the filling.  Finished off with some powdered sugar, these bars will certainly be a hit even amongst non citrus lovers.  

I had the opportunity to have my Step-daughter bake these with me.  **YAY!! I hope my baking skills are rubbing off on her**  This dessert is a great recipe that kids can help you with.  It isn't too complicated, and they can use their hands (which they love).  It's a great bonding experience, and it's also good to encourage your kids to tap into their inner baker.  So grab your kids, or your husband, or a friend, or just yourself, and get baking!

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 cup granulated sugar
  • 2 teaspoons grated lemon peel
  • 2 tablespoons lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Additional powdered sugar

Steps

  1. Heat oven to 350 degrees.  In a medium bowl, mix flour, butter, and 1/4 cup powdered sugar with spoon, until well mixed.  Press in ungreased 8 or 9 inch square pan, building up 1/2-inch edges.
  2. Bake crust 20 minutes; remove from oven.  In medium bowl, beat all remaining ingredients except additional powdered sugar with electric mixer on high speed about 3 minutes or until light and fluffy.  Pour over hot crust.
  3. Bake 25-30 minutes longer or until no indentation remains when touched lightly in the center.  Cool completely in pan on cool rack, about 1 hour.  Dust with powdered sugar.  Cut into 5 rows by 5 rows.

 

Usually I have tips for you, but this recipe was really easy to follow, and simple in nature.  I love lemon bars, but my Step-daughter is a tough cookie when it comes to her desserts.  She tried them with a smile #winning and said that the crust was delicious, but lemon isn't her favorite.

Hey we can't win them all...but at least she tried them!
