Baked Parmesan Crusted Chicken

I made this chicken in a Plated meal a few months back and absolutely loved it.  So now I am revisiting, and sharing just the chicken portion of this meal with you.  The great thing about it is it's baked #lesscalories #healthy, it's easy to make, AND it tastes delicious!  It's crunchy and flavorful, and in my opinion better than any fried chicken cutlet you would make.  What more could you ask for?  Make it with any side you like or throw it over a salad and you'll have yourself an awesome meal in no time!

Ingredients

  • 8 boneless skinless chicken breasts
  • 4 tablespoons dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 10 tablespoons grated parmesan cheese
  • 1 1/3 cup panko breadcrumbs
  • salt
  • pepper
  • olive oil

Steps

  1. Preheat oven to 450 degrees.
  2. Pat chicken dry, and using a meat mallet or heavy pan, pound to 1/4 inch thickness.
  3. Line a baking sheet (or 2) with foil.  In a medium bowl whisk together mustard, 4 tablespoons of olive oil, 1 teaspoon salt and pepper as desired.  Add chicken to bowl to coat OR use a brush to coat mixture onto chicken.  I find the latter much easier.  Arrange chicken on the prepared baking sheet. 
  4. Put garlic powder, oregano, parmesan cheese, and panko bread crumbs into a ziplock bag.  Add 4 tablespoons of olive, seal, and shake to combine.
  5. Pour breadcrumb topping over chicken, dividing evenly and pressing to adhere.  Bake until chicken is cooked through and no longer pink, about 12 minutes.

Perfectly golden, crunchy, and flavorful this easy baked parmesan crusted chicken will quickly become a staple at the dinner table.

You don't have to wash your chicken before cooking it.  I once took a cooking class, and the instructor said that washing chicken spreads contaminants all over your sink! *YUCK* I haven't washed chicken since that day and so far so good!
